2023 Gewürztraminer

The 2023 Gewurztraminer is from the Sunrise Hill Vineyard, located in Interlaken on western Cayuga Lake, one of our longstanding grower partnerships. It sits on Lima silt loam soils, a soil series unique in our cellar. The Lima series are moderately drained soils, nearly level to moderately steep, formed in glacial till that incorporate limestone and calcareous shale.

2025 Bouquet

Our Bouquet wine is unique in that it is made solely from saignéed juice. Saingée is a process which concentrates flavor and tannin in red wines, whereby juice is removed from a vessel prior to fermentation, leaving behind skins, stems, and seeds. We saignée most of our red wines, yielding a consistent supply of slightly-pink juice. We then tank ferment each batch separately, often by varietal, blending once dryness is achieved.

2024 Pinot Noir

From 57% Estate fruit and 43% grower fruit, the 2024 Pinot Noir spans both the east and west sides of Seneca Lake, as well as the west side of Cayuga Lake, with myriad different soils, aspects, ripeness levels, whole cluster components, fermentation lengths, and types of oak barrel. The final blend covers the length of the Pinot Noir harvest but in 2024, the harvest period only lasted a few days due to inclement weather on the horizon. With its variety of styles and techniques, the final blend represents the Pinot Noir harvest and our various vineyard sources, allowing each site to contribute its essence to the final blend.

2024 Cabernet Franc

The 2024 Cabernet Franc is a blend of 80% fruit from our grower partners and 20% from our Estate Davis Vineyard. The growers represent both sides of Seneca Lake, in the Dundee and Penn Yan areas, as well as Hector and Lodi. With distinct soil profiles, aspects, vine ages, and proximity to the lake shore, each site was carefully selected to create a Cabernet Franc that reflects the entire vintage—a warm, sun-drenched season that delivered beautiful depth and flavor.
