Notes of baking bread and juicy pear on the nose.  Flavors of peach cobbler, green apple, and brioche. 

Best enjoyed at 39°-46°f

• 63% Chardonnay, 31% Pinot Noir, & 6% Pinot Meunier

• Vineyard locations: 87.5% east side of Seneca Lake, 12.5% west side of Cayuga Lake

• Hand harvested from August 22nd - September 1st 

• Unfined & sterile filtered at tirage

• Tirage bottled: 2/22/2016

• Hand disgorged 1/27/ 2023

• Dosaged with Chardonnay

• Brix: 19.4°, 19.5°, 19.0° • pH: 3.17 • TA: 7.7 g/L • RS: 0.25% • ABV: 12.0% • Dosage TA: 3.5 g/L

2015 Vintage Notes

For the second year in a row, we experienced another very harsh winter in the Finger Lakes.  Sustained low temperatures and late frosts caused a great deal of vine damage and bud death but as always lower yields result in improved fruit quality.  In spite of the harsh winter, we were graced with a growing season that started out cool and wet but finished with a healthy showing of sun and heat.  Harvest kicked off at the usual time with lots of sun and was temperate with little rain.  All in all, it was a good harvest and though yields were down between 20-40% on nearly every varietal the result was exceptional quality, with complex fruit across the board.  Expect lush, rich wines from this vintage.
